"Vegetable Fritters" Recipe





Thanks Mom for this recipe...  I use it often.
It's easy...  The frying somewhat time consuming...

Mix all together: 

1 tin mixed vegetables
1 tin cream style sweetcorn
1 chopped onion
Left over vegetables – fresh or raw
(I keep the broccoli stalks in the fridge when I serve broccoli,
I food-processor-chopped them for this mix)
2 eggs (or more… depending how much vegetable mix you have)
Flour to bind to sloppy mixture 

Shallow pan fry in vegetable oil
Drain on a paper towel – optional… 

Serve hot with salad right away
or enjoy cold later – with salad!

We love them!
We don't eat fried foods often, so we enjoy them when we do!
